Abstract:
As the stabilizer of Pickering emulsion, cellulose nanomaterial has attracted attentions of researchers due to its excellent stability, environmental friendliness, and small usage amount. This article reviewed the application mechanism, classification, and application of cellulose nanomaterials in Pickering emulsions, and made suggestions for the development prospects of nanocellulose-based Pickering emulsions, so as to provide references and ideas for future research and application of which in the fields of cosmetics, food, biology, medicine, papermaking, etc.
