Abstract: |
Cellulose nanocrystal (CNC) has shown great advantages in stabilizing Pickering emulsions because it possesses high rigidity, good thermal stability, superior mechanical properties, low density, multi-hydroxyl-enriched surface that can be further modified and is easy to be functionally modified. This review elaborates theories of Pickering emulsion and CNC, and then emphasizes applications of CNC-stabilized Pickering emulsions in the area of foods, biological medicine, adhesive materials, microcapsule materials, interfacial catalysis, etc. Finally, the future perspective of CNC-based Pickering emulsion is discussed, providing references for its future potential applications. |
