Abstract:
      Development of safe and effective food active packaging materials is currently an important development trend in the food field. Plant essential oils can be used in food active packaging due to their natural antibacterial and antioxidant properties. Encapsulation of EOs by the electrostatic spinning method can improve the odor of essential oils, maintain their chemical stability, reduce their oxidative and volatility, and at the same time confer them with a slow-release property, so as to better utilize the efficacy of EOs in food active packaging. This paper reviewed the principle of electrostatic spinning technology and the preparation of electrostatic spun fibers encapsulating EOs, the types of EOs and electrostatic spinning raw materials commonly used in food active packaging by the electrostatic spinning method were classified and described in detail, as well as the applications of electrostatic spun fibers encapsulating EOs in food active packaging was outlined.
